A total of 48 chilled chickens were used in the study. Chicken carcasses were randomly purchased from different markets of Ismailia city on day of slaughter. All collected samples were stored at 3:1:1°C and bacteriological evaluation was done daily until the end of their shelf-life. The initial mean of total aerobic count was 4.08 Log CFU/g. On the fifth and sixth day of chilling storage, the mean of total aerobic count reached 6.39 and 6.81 Log CFU/g respectively. The initial mean of total psychrophilic count was 3.76 Log CFU/g on initial day 0, increased by 3 Log after 4 days of chilling sto-rage period. On the sixth day of chilling storage, total psychrophilic count reached 6.68 Log CFU/g. The Initial mean of Staphylococcus aureus count was 3.4 Log CFU/g, and progressively increased with chilling storage pe¬riod attaining final counts of 4.28 Log CFU/g for day 5. The initial mean of total coliform count was 2.76 Log CFU/g and progressively increased with chilling storage period attaining high counts of 6.03 Log CFU/g on the end of approved shelf-life. Prevalence of E. coli was 33.33 % of the examined chilled chicken meat samples. Suggestions and recommendations for im-proving the safety and quality of chilled chicken were given.
