Summary, etc. This study was conducted on Jojoba oil. The physical, chemical properties, fatty acid composition and oxidative stability were studied and compared with sunflower and soybean oils. From this study it can be notice that Jojoba oil had lower iodine value, refractive index and viscosity than both sunflower oil and soybean oil. The oxidative stability of jojoba, sunflower and soybean oils were 50, 6 and 7(hrs), respectively. Also the fatty acids composition of the oils were studied and the results indicated that jojoba oil contains high amounts of unsaturated fatty acids, which amounted 98.71% of total fatty acids. Jojoba oil used in many industrial applications. In this study is used to break and control the foam formation in crude soybean oil during the frying process of potato. The jojoba oil was evaluated as an antifoaming agent it reduced the foam high without change physical and chemical properties of oil.
