The effect of Labneh fortified with soymilk on the growth of the probiotic bacteria such as Lactobacillus acidophilus, Lactobacillus reuteri, Lactobacillus rhamnosus and Bifidobacterium bifidum was studied .The samples of Labneh containing soymilk were analyzed when fresh and periodically during refrigerator storage period (4 weeks) for microbiological, chemical and organolrptic properties.. The Labneh fortified with soymilk had positive effect on the growth of probiotic bacteria.
