The effect of honey on growth and viability of the probiotic bacteria such as Bi- fidobacterium bifidum; Lactobacillus acidophilus and Enterococcus faecium Was studied to determine whether these organisms were affected by honey compared with control (without honey) during refrigeration. Honey was effective in enhancing the growth rate of two probiotic strains compared with control. Logarithmic phases of growth for two probiotic strains were observed during the first 4 to 8h post inocu- lation.
