Dehydration process was carried out at 25±5°C for several hours using phosphoric acid (0.1% w/w) as a catalyst, at which, satisfactory proportions of CLA were obtained. By monitoring the changes in fatty acids composition and other analytical parameters, the highest yield (50.93%) of CLA was attained after only 3 hr of dehydration process.
