The effect of PO used in fiying process addition on the growth of rats and some of their internal organs was studied. In addition the histopathological alterations ofboth rat's liver and kidney were also examined. A gradual increase in different ratios of the body weight of all studied groups either 15 or 28 days from the beginning of experiment was taken place. The rate of increase of the 2nd group (fed on diet containing Po after 20 fryings of potato chips), 3rd group (po after 10 fryings offalafel) and 4th group (PO after 20 fryings of falafel) was less than occurred in the control and III groups (PO after 10 fiyings of potato chips). The rate of increase in rat's body weight fed on balanced diets containing PO used in falafel fiying was less than that of PO fed on balanced diets containing PO used in potao chips frying.
