A total of 108 local meat and poultry samples produced by 3 national Companies (36 from fresh sausage, 18 from chicken luncheon, 36 minced meat, and 18 from chickens) were tested. The microbiological quality was determined by total aerobic viable counts, total mesophilic and psychrophilic bacteria, total coliform, and faecal coliform, molds, yeasts, and pathogenic bacteria (Staphylococcus aureus, Salmonella spp. and Listeria monocytogenes).
