A total of 100 random samples of some Egyptian soft cheeses (50 each of kareish and tallaga cheese) were collected from different farmer's houses and shops in Bcni-Suef city and villages around the city, The mean values of TBC, ps)chrotrophic, Total colifonns, faecal colifonns and E,coli counts were 4,19xI01 , 1.45xI01 , 7.7 xl06, 2,lxlif and 2,97x104 I g of the examined kareish cheese samples. respectively, The mean values of psychrotrophic, Total colifonns and faecal coliforms counts were 7,7xI01, 5.Jx1Ql and 6 x 10' I g of the examined tallaga cheese samples, respectively, E,coli and Y,enterocolitica organisms were tected in 56 and 10 % of the examined kareish cheese samples and in 6 and 4 % of the examined taHaga cheese samples, respectively. None of the examined cheese samples C(lntained C.sakazakii. The public health significance and suggested control measures were discussed.
