In: Zagazig Veterinary Journal 2005.v.33(3)Summary: One hundred random samples (50 of Market raw milk and 25 each of Damietta and Kariesh cheese) collected from different localities in Sharkia Governorate, Egypt, were examined for detection of their sanitary condition. The bacteriological examination showed that the mean proteolytic count/ml or gram in examined raw milk, Damietta and Karicsh cheese samples were 5.3x10⁶, 3.81x10⁶ and 2.84x 10¹², respectively.
