The means of counts ( cfu/g) of total aerobic bacterial, total Psychrotrophic bacteria, Enterobacteriaceae, Coliforms, Staphylococcus aureus, Mould and Yeast in mutton samples (fore and hind quarters) were 6.5xl06±1.4x106 & 5.8x106±1.4x106 , 3.2x 106±5.5x105 &4.6x106±1.1 x106, 6.2x 105±1.3x 105& 6.1 x105±4.0x 104, 5.0x105± 1.3x 105&5.9x 105±1.3x 105, 2.2x 106±1.Ox 106& 3.89x 106±1.1 X 106 & 6.1 X 104±1.5x 104 & 1.6x105±6.0x1O4, 4.1x104±9.1x103 & 1.2x104±1.9x103 cfu/g respectively. While the means of these microbial counts (cfu/g) in examined beef samples (fore and hind quarters) were 1.4x106±3.3x105 & 9.6x105±1.6x105, 6.5x105±1.6x105 & 1.2x106±2.2x105, 8.5x104±3.8x104 & 2.1x106±9.3x105, 5.8x105±1.4x105 & 3.9x104±1.3x1O4, 5.9x104±3.5x104 & 1.6x105±7.6x104, 2.2x104±5.8x103 & 1.8x104±3.0x103, 8.6x103±1.4x103 & 2.8x105 ±1.9x104 cfu/g respectively. Coliforms microorganisms were isolated by different percentage from examined mutton (fore and hind quarters) as follow: E. coli (Fecal&Non fecal) 44% and 49%, Citrobacter spp. 24% and 26%, Klebsiella spp. 23% and 14% and Entrobacter aerogenes 9% and 11%. While the same microorganisms were isolated from examined beef samples (fore & hind quarters) as 43% and 51%, 28% and 24%, 21% and 19%, 9% and 6%, respectively. Salmonellae could not be detected in both mutton and beef.
