Subject(s): Online resources: In: Assiut Veterinary Medical Journal 2011.v.57(29)Summary: Chemical and microbiological analyses were carried out on 50 random samples of raw goat's milk collected from different places in Qena province to evaluate their sanitary condition. The total solids of the examined goat's milk samples had a mean value of 10.9 ± 0.93 and ranged from 9.49% to 13.3%, while, water contents ranged from 86.7% to 90.51% with a mean value of 89.04 ± 0.94%. Regarding fat % of the examined goat's milk samples, it was varied from 2.66% to 4.84% with a mean % of 3.46 ± 0.52. While, solids non fat % (SNF%) had a minimum of 6.57% and a maximum of 8.6% with a mean value of 7.46 ± 0.32%. Protein % was varied from 2.71% to 4.9% with a mean value of 3.45 ± 0.53%. The examined goat's milk samples had minimum lactose percentage of 2.73 and a maximum of 4.59 with a mean value of 3.99 ± 0.32%. The titratable acidity of the examined goat's milk samples as one of the keeping quality tests fluctuated between 0.09 and 0.26 with a mean value of 0.15 ± 0.01%. Concerning the microbiological results of the evaluated samples, it was found that the average counts for aerobic plate, coliforms, fecal coliforms, enterococci, S. aureus and yeasts & molds were as follow 1.3 x 10⁶,3.8 X 105 , 1.7 X 10² , 1.6 X 10³ , 1.8 X 10³ and 1.9 x 10³ cells/ ml, respectively. The public health importance of the counted organisms and the prophylactic measures to improve the quality of dairy farm milk were discussed.
