Animal's products are one of natural foods containing high quality protein, essential fatty acids, phospholipids, minerals and vitamins. In this study, β – Cyclodextrin (β – CD) were used to remove cholesterol from cream 70% fat under different conditions. The results inducted that,T12:15% β – CD, pH value 5, sample: water 1:4 and stirring at 150 rpm for 30 min. gave the highest reduction in cholesterol 67.72%.While, T16:15% β – CD, pH value 10, sample: water 1:4 and stirring for 30 min. at 150 rpm would be preferred where cholesterol and total saturated fatty acids were reduced by 67.29% and 49.64%, while total unsaturated and total polyunsaturated fatty acids increased to 50.36 and 13.82% respectively.
