Factors affecting the production of mushroom mycelium from Agaricus bispurus, Pleura/Its os/re(lflls and Pholiofa aeg'erila grown in mango stone infusion for 7 days were studied. The optimum conditions enhancing the economic cocflident (EC) of mushroom mycelium were 25. 30 and 20HC for incubation temperature. 4.0. 4.5 and 5.5 lor pH values. 300 r.p.m. tor shaking rate and 2S : I for C/N ratio in case of Agaricus hisporus, Pleurotus OSJreatus and Pholiota aegerila with high EC of 66.s' 51.9 and 63.9.respectively. In comparison under thl'Se optimum wndi· tions. molasses media (as control) reflected lowered EC than that of mango stone infusion. The dry mycelium ofA. bisporus showed a higher protein and fat contents than Pleurotus ostreatus and Pholiota aegerita. Inorganic elements. Mg. Ca, Na. K. Cu. Fe, Mn, Zn. Pb and Cd were also detected. Kekword.,·: fermentation, mushroom, food wastes.
